About Operetta

“Operetta” is a young and contemporary concept serving Italian food beyond traditions and beverages beyond expectations. With the engagement of local and multi-cultural talents, a lively stage is set for a memorable dining experience in the heart of Admiralty, at Pacific Place 1/F.

The restaurant interior features an ensemble of natural, warm and eclectic materials such as wood, stone, fabrics and elegantly shaped brass structures, all integrated into a comfortable and captivating environment. Duo Head Chef Fabio Sgrò and award-winning Culinary Director Chef Mitsuru Konishi breathes in a young and contemporary vibe, using premium ingredients sourced from around the world to ensure quality and authenticity of flavours in each dish. Italian classics such as pizza, pasta, grilled meats are revisited with inspirations from the warmth of Mediterranean climate and influences from Asian spices.

Casual and cool, the bar is an ideal spot for after work or post dinner drinks, with A La Carte bites to enjoy all day. Operetta demonstrates the Art of Drink and takes guests on a unique journey with crafted cocktails perfectly balanced using premium spirits, homemade syrups and different textures. The thoughtfully curated drink list allows enthusiasts to explore the history of beers, learn about the traditions of mezcal, scoure through centuries and styles of whiskies, or discover a delicious wine.

Mitsuru Konishi, Culinary Director

"In Operetta I wish to extend the facets of Italian cuisine beyond its common knowledge. By introducing a new flavor profile into the menu, my aim is to enhance the distinctive characteristics and components of each dish while honoring the core values of its original recipe".

Originally from Okayama - Western Japan, Chef Konishi has sharpened his skills over the last 12 years after embarking on a culinary journey from Tokyo to Paris prior to be Hong Kong in 2013 to helm Wagyu Takumi, awarded with two stars in the prestigious Michelin guide Hong Kong & Macau consecutively from 2014 to 2016. Thanks to the excellence and discipline acquired through the execution of Japanese and French cuisines, he has proven to be a Chef with sharp techniques and limitless creativity, who navigates with ease between cooking styles and flavours that can truly add to Operetta’s unique fare.

“In Piedmont and many region of Italy, we give high importance to sourcing and cooking with local produce. I see Operetta as a place where tradition meets simplicity and originality. Showcasing a variety of new dishes, each creation expresses exciting flavors through the use of quality ingredients from around the world.”

Hailing from the small town of Montà in Piedmont, Fabio’s fascination for gastronomy developed at a very young age. Eager to pursue a culinary career, he soon joined a Hotel school in his native region which lead him to work alongside mentors from numerous Michelin-starred restaurants in Italy after graduation. His understanding of traditional Italian cuisine guarantees an authentic yet refreshing approach of the classics

Jonny Amir

Jonny Amir, Bar Manager

Highly motivated and enthusiastic, Jonny’s aptness in combining technical know-how with talent; passion with a sense of innovation lead him to developing a unique approach to mixology. Having dedicated the last 10 years to researching and studying the origins of spirits and liquors each of Jonny’s creation adds a new page to the story of contemporary cocktail making.

With 15 years in the field of hospitality and wine industry, Michele’s affection for the lands and its fruits brought him to Hong Kong in 2012 to share his knowledge in oenology and Italian gastronomy.
